Colour & Appearance
Deep purple-red with luminous violet reflections – a youthful, vibrant hue that underscores the freshness of the vintage.
Nose
Here Cabernet Sauvignon reveals itself in Tuscan interpretation: classic varietal aromatics meet Mediterranean macchia. Intense notes of cassis and blackcurrant meld with bay leaf, rosemary, juniper and a whisper of black olive. These are joined by Espelette pepper and subtle floral accents – a multi-layered, powerful bouquet.
Palate
Refreshingly taut on the attack, with cool, precise fruit. The cassis and blackberry fruit is structured by herbal charm and powdery-fine tannins. Leafy notes of blackcurrant leaves and bramble foliage lend the wine a spicy herbal freshness. Medium density, elegant rather than opulent – a Cabernet with finesse and drinkability.
Finish
Almost mineral-cool, with lingering dark red fruit and fine tannins. The wine bids farewell with refreshing length and a hint of Mediterranean herbal spice.
Terroir & Origin
The grapes come from a single hectare of organically farmed vineyard at Monte Amiata near Poggioferro. The 19-year-old vines are rooted in iron-rich, limestone soils at 550 metres altitude – a cool terroir that gives the wine its distinctive freshness.
Grape Variety & Vinification
100% Cabernet Sauvignon, spontaneously fermented with natural yeasts. Whole-bunch fermentation under semi-carbonic conditions (8-12 days maceration) ensures fruit clarity and soft tannin structure. Aged exclusively in concrete tank, minimal sulphur use (below 25 mg/l total SO₂). Only 5,000 bottles produced.
Food Pairing Suggestions
A versatile companion to grilled tuna, lamb cutlets with rosemary potatoes, Pasta al Ragù or Pecorino Toscano. Also an intriguing choice with mushroom risotto or herb focaccia with olive oil.
