Wine Description for Attis Mar Aged 9m Underwater in the Galician Sea 2024 by Attis Bodegas y Vinedos

Colour & Appearance
Luminous straw yellow with brilliant, greenish-shimmering reflections – a wine that announces its cool elegance and maritime provenance at first glance.
Nose
Here reveals itself a fascinating duality: initially dominated by a clearly defined, tropical-influenced fruit with pomelo, grapefruit and blood orange, flanked by exotic notes such as passion fruit, star fruit and persimmon. A fine yeasty component lends depth and stability, whilst marzipan and roasted almond contribute subtle complexity. With air contact, a remarkable transformation unfolds: the wine glides into a maritime character, characterised by salt, sea spray, seaweed and oyster shell. This metamorphosis never feels contrived, but rather organic and driven by inner logic.
Palate
Enormously juicy and with impressive pressure in the mid-palate, yet always elegant and without any heaviness. The texture is silky and smooth, the acidity medium-bodied, incisive and structure-building. The fruit remains subtle and shifts between yellow and green tones, whilst the maritime salinity increasingly gains presence. A wine of remarkable inner coherence.
Finish
Long, cool and suffused with salty, maritime aromas. The combination of juiciness, elegance and fine melt leaves a lasting impression of rightness and clarity.
Grape Variety & Vinification
Pure Albariño from the Rías Baixas, which after vinification matures for nine months at nine metres depth in the Galician Atlantic. This unconventional method imparts the wine its pronounced maritime character and cool elegance, without overwhelming the varietal fruit.
Food Pairing Recommendations
Made for oysters, scallops and seafood of all kinds. Excellent also with ceviche, sashimi, grilled sea bass or Pulpo a la Gallega. The maritime salinity makes it the ideal companion to Galician Atlantic cuisine.
Special Features
The underwater ageing is more than a gimmick – it fundamentally shapes the character of this wine. The consistently cool temperatures, the elevated pressure and the gentle movement impart to the Albariño a depth and maritime authenticity that clearly sets it apart from conventionally aged representatives of the region. A fascinating experiment with a convincing result.
