Wine Description for Alquimia Vin de voile 2021/2022 VdF from Roc des Anges

Colour & Appearance
Medium straw yellow with golden reflections – a wine that already hints at its oxidative origins in the glass.
Nose
Decanting is essential: The Alquimia needs air to unfold. Initial ester notes quickly give way to a fascinating bouquet of salted almonds and walnuts, candied orange peel, crumbly apples and biscuit. Subtle notes of white miso and pine resin join in – complex, distinctive, irresistible.
Palate
Dry, lively and of remarkable freshness. On the palate, hazelnuts, caramelised apples, vanilla and a hint of honey unfold – yet the wine remains consistently lean and elegant, never heavy. The acidity, shaped by the slate terroir, provides a silky texture and subtle minerality that elevates this oxidative white wine to another level.
Finish
Long, saline and invigorating. The finish recalls aged nut sherry, yet remains fresh and inviting through its lively acidity – a wine that tempts you to take the next sip.
Terroir & Origin
From Roussillon, the wild south-west of France, where the winery Roc des Anges run by Marjorie and Stéphane Gallet counts amongst the most consistent addresses for artisanal winemaking. The distinctive slate terroir lends the wine its characteristic tension and mineral depth.
Grape Variety & Vinification
A blend of Grenache Gris and Macabeu, pressed as whole bunches and aged in used barriques and tonneaux. The wine is an authentic Vin de voile: the barrels were deliberately left unfilled, allowing a flor layer to develop – oxidative ageing in its purest, most elegant form. The 2021 and 2022 vintages were combined as a blend.
Food Pairing Suggestions
An ideal companion to grilled sea bream with lemon and fennel, to roasted potatoes with rosemary, capers and lemon wedges or – surprisingly harmonious – to sushi with mature soy sauce and fresh wasabi.
