Wine Description for Alquimia Vin de voile 2021/2022 VdF from Roc des Anges

Colour & Appearance
Medium straw yellow with golden reflections – the colour already reveals the oxidative maturity of this extraordinary wine.
Nose
Patience is rewarded here: After initial ester notes that dissipate with air contact, a fascinating aromatic spectrum unfolds. Salted almonds and walnuts dominate, accompanied by candied orange peel, crisp apples, biscuits, a hint of white miso and pine resin. Definitely decant!
Palate
Dry, stimulating and surprisingly lively. The saline minerality meets fruity elegance: hazelnuts, caramelised apples, vanilla and honey blend into a harmonious whole. Despite the oxidative vinification, the wine remains remarkably fresh – the slate-driven acidity lends it tension and a full, silky texture. Nothing ponderous, but pure elegance.
Finish
Long, saline and nutty with subtle freshness that refreshes the palate and invites the next sip.
Terroir & Origin
From Roussillon, from slate soils that give the wine its characteristic minerality and vibrant acidity – a counterbalance to the oxidative richness.
Grape Variety & Vinification
A blend of Grenache Gris and Macabeu from the 2021 and 2022 vintages, pressed as whole bunches. The ageing took place oxidatively in used barriques and tonneaux without topping up – allowing a flor layer to develop, giving the wine its distinctive Vin de Voile character. An alchemy that deserves the name Alquimia.

Grilled sea bream with lemon and fennel, sushi with mature soy sauce and fresh wasabi, roasted potatoes with rosemary, capers and lemon wedges. Also excellent with aged hard cheeses or dishes with nut butter.
