- Initially reductive and closed, the wine opens to a fascinating aromatic palette on the earthy-mineral side. Anise, chamomile and honey form an unusual, intriguing composition. Abundant herbs enliven the bouquet, whilst bitter almond and green walnut provide depth and contrast. Delicate notes of quince and tart apple round out the complex aromatic profile.

- Here the wine reveals its paradox: simple and accessible, yet quite complex. Despite moderate acidity, it comes across as remarkably juicy. The present tannins are the key to its freshness and lively drinking flow. It lingers long on the palate and distributes saline spice notes – almost Maggi-like, it combines herbal spice with mineral saltiness. A truly hearty wine with substance that can certainly handle fat. Only the tannin structure shows some immaturity in places with green tendencies.

- From Roussillon, where Tom Lubbe of Matassa counts among the pioneers of the natural wine movement. The region on the Spanish border provides, with its old Macabeu vines and sparse soils, the foundation for this characterful white wine.
- Grape Variety & Vinification
- Macabeu, an underrated Catalan grape variety, is vinified here naturally and without fining. The moderate alcohol content of just 10% Vol. is remarkable and underscores the purist approach. Clearly made with skin contact, which explains the tannins and golden colour.
