The best pairings for every type of shellfish
From mussels to razor clams – the perfect wine for each variety
Not all shellfish are alike: mussels call for crisp acidity, scallops for a rich Burgundy, clams for Italian freshness and razor clams for Mediterranean lightness.
In short — which wine with shellfish? Mussels favour Muscadet or Chablis, scallops a rich Burgundy, vongole Sancerre, and razor clams zesty whites. The more delicate the shellfish, the finer the wine; the creamier the sauce, the more unctuous it should be.
At lebendigeweine.de, we have selected our finest pairings from 167 wines recommended for shellfish – sorted by type. Because every shellfish has its own character and needs the right wine.
The golden rule: white wine dominates, but the style varies. Mussels want minerality, scalps creaminess, clams freshness and razor clams a hint of salt.
Mussels – Chablis with moules frites
Mussels are the classic: moules marinière, Belgian-style with chips, in a white wine broth or with aioli. Their salty, oceanic freshness calls for wines with minerality and acidity.
Chablis is the perfect partner: its steely acidity and chalky minerality mirror the mussels. But Chenin Blanc or Muscadet also work superbly.
Chenin by Majas IGP
A crisp Chenin Blanc from the Roussillon. Apple, citrus, mineral freshness – the perfect complement to mussels with aioli. Proof that good white wine need not be expensive.
Chablis 1er Cru Vau de Vey AOC
A Premier Cru from de l’Enclos. The Vau de Vey vineyard site is renowned for its elegance. Kimmeridgian chalk lends the wine its typical minerality – a classic pairing with moules frites.
Chablis Clos Béru Monopole AOC
The monopole vineyard of the de Béru family – a walled parcel in the heart of Chablis. Biodynamic, aged in large wooden casks. Perfect for mussels from the cast-iron pan with pancetta butter.
Scallops – Burgundy with beurre blanc
Scallops are the queens of the shellfish world: sweet, delicate, with nutty roasted aromas when caramelised in the pan. Serve them with beurre blanc, saffron sauce or wild garlic.
White Burgundy is the classic partner: Chassagne-Montrachet brings along those buttery notes. Champagne or a German grower’s sparkling wine (Winzersekt) also works superbly – the fine mousse refreshes the palate after every bite.
Chardonnay
A Baden Chardonnay from Klaus Vorgrimmler. Burgundian style without the Burgundian price tag. Subtle wood, creamy texture – perfect with scallop and creamy kohlrabi.
Éclats de Meulière, Extra Brut V22/21
Champagne from Jeaunaux-Robin, made from roughly 45-year-old biodynamically farmed vines on the flint soils of the Petit Morin, with brioche, bread crust, ripe apple and apricot, juicy and with a saline freshness on the finish. The brioche notes and fine mousse complement the buttery sweetness of the scallops in saffron sauce and refresh the palate after every bite.
Lilium, Grand Vin Blanc Sec AOC 2022
A dry Sémillon from Château Climens, grown on the limestone of Barsac: yellow plum, quince and green apple, alongside wax, mint and white blossoms, with plenty of volume on the palate and a soft, clear acidity. This waxy richness carries scallops with wild garlic and cream, while the acidity keeps the cream sauce fresh.
Venus clams – Sancerre with vongole
Venus clams – vongole in Italian – are the stars of Mediterranean pasta cuisine. Spaghetti alle vongole with garlic, olive oil, parsley and a splash of white wine.
Sancerre is our first choice here: the mineral acidity of the Sauvignon Blanc harmonises with the saltiness of the clams and the pungency of the garlic. But a Rosé from Provence can also be a surprise.
Château de Pibarnon Rosé AOC
Bandol rosé from the benchmark estate. Mourvèdre-based, no pale Provence rosé – here you get structure and depth. Perfect with spaghetti vongole and a touch of chilli.
Sancerre blanc “Les Romains” AOC
Biodynamic Sancerre from Domaine Vacheron. The “Les Romains” vineyard site on limestone gives the wine minerality and depth. Perfect with simple Venus clams with garlic.
Condrieu “Le Tinal” AOC
Viognier from the northern Rhône by Maison Stephan. Apricot, white blossoms, silky texture. For pan-fried John Dory with saffron broth and Venus clams – a feast.
Razor clams – ideal with crisp white wines
Razor clams are the most elegant of all shellfish: long, slender, with sweet-salty flesh. Best simply grilled with parsley and a little smoked butter.
The simplicity of the preparation calls for uncomplicated wines: a crisp Prosecco, a mineral Sancerre or a fresh Burgundy from the Mâconnais. No oak notes, no heavy aromas.
Valdobbiadene Prosecco DOCG Frizzante
Natural Prosecco from Casa Coste Piane. Refermented in the bottle, slightly cloudy, bone dry. The fine mousse is perfectly refreshing alongside grilled razor clams.
Bourgogne Aligoté AOC 2024
Aligoté by Thomas-Collardot from Meursault, slender and bone dry with lemon, lime, green apple, white blossoms and a hint of herbs at 12.5% ABV. Its lively acidity and clean finish let the sweet-salty flesh of the grilled razor clams with parsley and smoked butter speak for itself.
Pouilly-Vinzelles “Les Quarts” Zen AOC
Biodynamic Chardonnay from the Mâconnais by La Soufrandière. Magnum bottle for special occasions. Perfect with razor clam ceviche with ají limo and trout caviar.
Frequently asked questions
Which wine pairs best with shellfish?
That depends on the type of shellfish: mussels go well with Chablis or Muscadet. For scallops, we recommend full-bodied Burgundies. With clams (vongole), Sancerre or rosé works beautifully. And razor clams pair nicely with Prosecco or a light white wine.
Does red wine go with shellfish?
Red wine is unusual with shellfish. The tannins can taste metallic when combined with the freshness of the sea. White wine, rosé or sparkling wine are the better choice.
Which wine with moules marinière?
The classic pairing for moules marinière is Muscadet or Chablis. The mineral acidity of these wines harmonises perfectly with the salty ocean freshness of the mussels in their white wine broth.
Which wine with scallops?
For scallops, we recommend full-bodied Burgundies: Meursault, Puligny-Montrachet or Chassagne-Montrachet. Their buttery notes complement the sweetish shellfish perfectly. Champagne or Winzersekt (grower’s sparkling wine) also works well.
Which wine with spaghetti vongole?
A mineral Sancerre or a rosé from Provence pairs beautifully with spaghetti vongole. The acidity harmonises with the garlic and olive oil, while the minerality complements the saltiness of the clams.
