Info about the wine
The Toison d'Or is a single-varietal Pinot Gris from Guillaume Sorbe. The fruit comes from plots in Reuilly with vines on predominantly clay-limestone soils, but also on soils with pebbles and red sand. After spontaneous fermentation, the wine was aged for three years, partly in tanks, but mainly in used 400 and 600-litre barrels. Toison d'Or has been labelled Vin de France since the 2018 vintage.
Color
Light white gold.
Nose
The fragrance shines with finesse and elegance. In addition to apple and pear, there are notes of citrus, lemon verbena, bright flowers, a hint of aniseed, ginger and artichoke. Everything is framed in a salty and iodised impression that transports you directly to the sea.
Palate
On the palate, the 2019 Toison d'Or has a delicate and incredibly delicate flavour. Its acidity and tannins are perfectly buffered by fruit and fine juiciness. A truly exceptional and extremely successful interpretation of this grape variety that is a great pleasure to drink, especially with aromatic cuisine!
Enjoy decanted from large glasses, oxygen gives it an extra boost!
