Wine Description for Toison d’Or VdF 2019 by Les Poëte

Colour & Appearance
Pale white gold, luminous and clear in the glass.
Nose
A nose of remarkable finesse and restraint. Apple and pear form the foundation, layered with citrus and lemon verbena, complemented by delicate floral notes. Subtle hints of anise, ginger and artichoke add complexity. The whole is enveloped by a fascinating saline and iodine minerality – a maritime signature that creates depth and tension.
Palate
On the palate, Guillaume Sorbe’s Pinot Gris reveals its most elegant side: delicate, fine-boned and impressively balanced. The vibrant acidity and subtle tannin – unusual for a white wine, but typical of this style – are perfectly cushioned by juicy fruit. The texture is silky, the structure precise, never intrusive. A wine that convinces not through power, but through refinement.
Finish
Long, mineral and refreshing, with lingering citrus notes and saline spice.
Terroir & Origin
The grapes come from parcels in Reuilly in the Loire, where clay-limestone soils with sections of gravel and red sand provide complexity. This geological diversity is reflected in the wine’s multi-layered character.
Grape Variety & Vinification
Pure Pinot Gris, spontaneously fermented and patiently matured for three years – partly in tank, but mainly in used 400- and 600-litre barrels. This extended ageing gives the wine its remarkable depth and integration. Declared as Vin de France since 2018, which allows Guillaume Sorbe greater oenological freedom.
Food Pairing Suggestions
This wine demands aromatic, sophisticated cuisine: grilled red mullet with fennel-orange vegetables, pan-fried sweetbreads with poached oysters in saffron sauce or a creamy salsify soup with pumpernickel crunch. Serve in large glasses without fail and allow time to breathe – oxygen allows it to blossom.
Special Features
An extraordinary, highly individual interpretation of Pinot Gris that breaks with conventional expectations. This is not an easy-drinking everyday wine, but a characterful wine for wine lovers who appreciate originality.
