Colour & Appearance

Pale straw yellow with vibrant green reflections – a visual promise of freshness and precision.

Nose

Currently still introverted, yet fascinatingly complex. Herbal-spicy notes dominate – borage, oregano, ground elder – an aromatic herbal spiral that intertwines with yellow fruit accents of apple skin and ripe pears. Beneath lies mineral depth: wet slate and salted lemons. A wine that reveals its secrets only reluctantly – patience will be rewarded.

Palate

Here the true class emerges: transparent, crystalline, disciplined. Not a gram of superfluous fat, instead sinewy, rich extract with elegantly woven acidity. The phenolics define finely at the tongue’s edge, the structure is of athletic elegance – Bruce Lee, not Schwarzenegger. Despite youthful accessibility, one senses the sleeping power, the immense ageing potential. A wine that demands decanting and deserves time.

Finish

Long, precise, with sustained minerality and subtle herbal spice. The acidity carries far without dominating – a finale of impressive clarity.

Terroir & Origin

From the south-western part of the legendary Ried Zieregg, the Steilriegel: 40-year-old vines on 16 million-year-old coral limestone, 50% slope gradient, 400-480 metres altitude. Loose brown earth on limestone saddle – a terroir that shapes structure and minerality.

Grape Variety & Vinification

Morillon (Chardonnay), spontaneously fermented, aged 24 months on fine lees in small oak barrels. Unfined, unfiltered – Armin Tement allows the terroir free rein. The new STK regulations permit only one grape variety per Große Lage – the Steilriegel is now a pure Morillon expression.

Food Pairing Suggestions

Skate wing with spring cabbage and spring turnips in lemon butter with capers, Portuguese roasted kid goat, or vegetarian: young spring cabbage and spring turnips in lemon butter. The wine pairs well with substance and spice.
