Rougeot's first cuvée from this vineyard: 55-year-old vines, pressed directly and aged for 20 months without bâtonnage.
Tasting note
Character
A white Burgundy with a clear edge: citrus and green apple up front, followed by a chalky, almost salty trail that lingers. The 2023 vintage was warm, yet this Saint-Aubin stays cool and taut, with an acidity that draws the wine out. Anyone who likes drive and precision will have emptied the bottle before giving it a second thought.
Terroir & Origin
“Les Champlots” is a premier cru of the Saint-Aubin appellation, and 2023 is the first cuvée Pierre-Henri Rougeot has bottled from it. The vines are about 55 years old, an age you can sense in the wine’s density and calm. Like everything under his own label, it is made in tiny quantities, often just a few barrels per vintage.
Grape Variety & Vinification
Pure Chardonnay, pressed directly and fermented with its own yeasts. The wine spends 20 months in barrel, a fifth of the wood new, and Rougeot deliberately does without stirring the lees. No sulphur is added during fermentation or ageing; only at bottling did this wine receive a minimal dose. It is neither fined nor filtered.
Food Pairings
Its taut structure calls for precise cooking: seared scallops, turbot with lemon butter or poultry in morel cream. With aged Comté, too, the wine shows how well salty cheese notes and chalky fruit go together.
