Tasting note
Colour & Appearance
Presents in the glass in a cool, pale straw yellow.
Nose
Arguably the most complex and reserved among the 2021 single-vineyard Sancerres from the estate. It presents itself with supreme elegance and a distinct sense of place: dominant notes of limestone, salt, iodine and oyster shells meet cool green accents and a subtle hint of white-fleshed stone fruit.
Palate
On the palate, this Sauvignon Blanc ignites tremendous drive and taut tension. A powerful body is carried by a captivating freshness. Flavours of elderflower, lime, crisp apples and green pears combine with fennel tops, culinary herbs, white pepper and a fine minerality.
Finish
The finish lingers with immense energy, maritime salinity and impressive length – an uncompromising expression of an exceptional cool vintage.
Terroir & Origin
The single vineyard site Guigne-Chèvres is situated on a gently sloping north-east-facing hillside. The soil: red clay over Caillottes, the marly Oxfordian limestone. As one of the pioneers in the Sancerrois, Domaine Vacheron has been BIODYVIN-certified across its 46 hectares since 2005.
Grape Variety & Vinification
100% Sauvignon Blanc from almost 40-year-old vines. Cousins Jean-Dominique and Jean-Laurent Vacheron combine French winemaking schools from Châteauneuf-du-Pape and Burgundy. The wine matured for ten months on its fine lees in Stockinger oak casks.
Food Pairings
A brilliant companion to tabbouleh with goat’s cheese, mint and fennel, refined lobster à l’Armoricaine, or zesty smoked eel with young artichokes, nettles and beurre blanc.
Special Features
This single-vineyard wine fascinates with its cool, intellectual depth and a Burgundian-like structure, resulting from the interplay of the Caillottes limestone and maturation in large oak casks.
