Tasting note
Colour & Appearance
A pale yellow that fades stylishly into silver towards the rim.
Nose
Crystalline and characterised by maritime freshness: aromas of oyster shells and a salty sea breeze combine with grapefruit zest, yellow stone fruit and white pepper. Mild herbs such as chervil, coriander and borage lend a refined spice to the bouquet.
Palate
Like liquid stone: a lean, chalky minerality meets cool fruit and cedary-citrus nuances. The ripe acid structure and fine-grained grip ensure tremendous drive, tension and aristocratic elegance on the palate.
Terroir & Origin
The grapes originate from the iconic Terres Blanches in Saint-Andelain. This soil composed of weathered Saint-Doulchard marl is rich in fossilized Exogyra virgula oysters and laced with fine layers of iron-bearing glauconite, lending the Sauvignon Blanc its radiant, fruit-forward and floral style.
Grape Variety & Vinification
100% Sauvignon Blanc. Winemaker Antoine Gouffier relies on purist craftsmanship: the grapes undergo spontaneous fermentation in stainless steel using indigenous yeasts. No fining or enzymes are added; only a minimal dose of sulphur is introduced prior to bottling.
Food Pairings
Outstanding with fresh oysters, seafood ceviche, lightly seared scallops or refined fish dishes with fresh herbs.
