Wine Description for Pinot Grigio „Salvadi“ DOC 2023 by Scarbolo

Colour & Appearance
Unusual for a Pinot Grigio, the Salvadi presents itself in pale cherry red with orange reflexes and silky-matte shimmer – a visual hint at the 15-day skin contact that gives this wine its extraordinary character.
Nose
The bouquet unfolds in layers: initially varietal notes of red apple with pips and skins, followed by pickled ginger and subtly smoky nuances. Green almonds, a nibbled peach stone, dried hay flowers and mild herbal spice complete the complex aromatic profile.
Palate
On the palate, the Salvadi reveals its full personality: phenolic in character, subtly smoky-spicy, with decent structure and highly aromatic backbone. Juicy fruit meets rich extract without losing finesse. The silky texture and medium-full body are carried by ripe acidity, firmly interwoven with bitter tannins.
Finish
Long and fruit-driven, with lingering phenolic presence and spicy notes.
Terroir & Origin
From the vineyard site Codis in the Friuli subregion Grave, characterised by rich alluvial soils with alluvial deposits of dolomitic limestone. The heavily silty soils lend the wine its characteristic minerality.
Grape Variety & Vinification
Hand-harvested on 7 September 2023, with a deliberately underripe portion for additional freshness. 15 days of skin contact in open tonneaux impart structure and tannins, followed by 27 months of ageing in tonneaux – an unusually ambitious treatment for Pinot Grigio that produces a wine of serious substance.
Food Pairing Suggestions
This structured, phenolic Pinot Grigio demands correspondingly robust dishes: roasted char, veal schnitzel with mushroom cream, risotto with porcini mushrooms, mature alpine cheese or Vitello Tonnato. Also an excellent choice with Prosciutto di San Daniele.
