Wine Description for Pinot Grigio „Salvadi“ DOC 2023 by Scarbolo

Colour & Appearance
Pale cherry red with orange reflections and silky matt shimmer – a visual hint of the 15-day skin contact that gives this Pinot Grigio its characteristic hue.
Nose
A multi-layered aromatic profile that unfolds like a zip file: Initially varietal notes of red apple with pips and skins, followed by pickled ginger, subtly smoky nuances, green almonds and a nibbled peach stone. Dried hay flowers and mild herbs round off the complex bouquet.
Palate
Phenolic in character and structured, the Salvadi presents itself with subtly smoky-spicy notes and a highly aromatic backbone. Juicy fruit meets rich extract, whilst finesse is maintained. The silky texture and medium-full body are supported by ripe acidity, firmly interwoven with bitter tannins.
Finish
Long and fruit-driven, with persistent phenolic structure that lends the wine remarkable persistence.
Terroir & Origin
From the sub-region Grave in Friuli, from alluvial soils with alluvial deposits of dolomitic limestone. The heavily silty soils of the flatland impart the wine’s characteristic expression. The vineyard site Codis provides the grape material for this extraordinary Pinot Grigio.
Grape Variety & Vinification
100% Pinot Grigio, hand-harvested on 7 September with deliberately some unripe grapes for additional freshness. 15 days of skin contact for tannin extraction and structure, fermentation in open tonneau, followed by 27 months ageing in tonneau – an unusually long maturation period that lends this wine depth and complexity.
Food Pairing Recommendations
The phenolic structure makes it an ideal companion for roasted char, Vitello Tonnato, veal brisket or risotto with porcini mushrooms. Also an excellent choice with aged mountain cheese or Frico friulano.
