Colour & Appearance
Rich golden yellow with bright reflections, threaded through with a lively, delicate perlage. A visually impressive Champagne that already reveals its signature in the glass.
Nose
Olivier Horiot proves with this Métisse why he counts among the most exciting winemakers in Champagne. The nose is austere and mineral, positively crisp and cool with pronounced stony notes. Amalfi lemon presents itself from its tart side, accompanied by yeast pastries and lemon tart. The controlled must oxidation lends the wine an open, generous personality. Fascinating is the interplay of vegetal aromas: star anise, fennel seed and fresh fennel meet lemongrass, chervil and lemon balm. Hints of sourdough crust round out the complex aromatic profile.
Palate
On the palate, the full brilliance of this boundary-pusher unfolds. The minerality is of breathtaking intensity, yet never feels forced or laboured – it is pure inevitability. A racy, precisely dosed acidity elegantly pushes the mousseux aside and deliberately leaves little room for restrained fruit. Here, minerality and spice reign. Despite this uncompromising purism, the wine remains remarkably approachable and inviting – an open character that convinces immediately.
Finish
The aftertaste recalls a perfectly composed Gin Basil Smash: herbal, refreshing, with a brilliant balance between spice and citrus freshness. Long, precise, unforgettable.
