Wine Description for Auxerrois 350 N.N. 2023 from Odinstal

Colour & Appearance
Rich, luminous golden yellow with bright reflections – a wine that already reveals its substance and maturity in the glass.
Nose
Intense and multi-layered, this Auxerrois presents itself with a fascinating duality between yellow fruit and herbal notes. Mirabelle plum, peach and khaki form the fruity foundation, whilst kaffir lime leaves and dried bay leaves impart an aromatic depth rarely found in this variety. Particularly charming: hints of summer meadow hay, marjoram, tarragon and mint, which give the wine an almost tea-like, sophisticated complexity. Subtle yeast notes with hazelnut and almond round off the bouquet, whilst a slightly musky character recalls ripe apples.
Palate
Here the Auxerrois reveals itself in its Burgundian purity: razor-sharp, precise and crystal-clear. Linear without heaviness, yet with impressive substance and volume. The moderate acidity carries perfectly without dominating, whilst the ethereal and herbal nuances provide excellent drinking pleasure. The subtly musky character lends the wine an accessible, comforting side – an Auxerrois that should appeal to a wide range of wine enthusiasts.
Finish
Long-lasting with a lingering echo of the herbal and fruity components, which blend elegantly together.
Terroir & Origin
The vines are rooted in basalt soils at 350 metres altitude – in the highest vineyard sites of the Palatinate. This elevation ensures cool nights and longer ripening periods, which is reflected in the wine’s freshness and precision. The planting years 2004 and 2014 guarantee a good balance between mature and younger vines.
Grape Variety & Vinification
Hand-harvested from 19th to 21st September. 67% stainless steel, 33% used barrels, of which 10% whole-bunch fermentation – a vinification that skilfully balances freshness and complexity. Seven months on the lees impart texture and depth. Lightly filtered, minimal sulphiting (43mg/l).
Food Pairing Suggestions
Roasted chicken with herbs, veal schnitzel with lemon, asparagus with brown butter, goat’s cheese, Thai curry with coconut milk or fish terrine. The herbal notes make it an ideal companion to herb-rich dishes.
Special Characteristics
An Auxerrois with character and depth that proves this often underestimated grape variety can achieve extraordinary results in the high-altitude vineyard sites of the Palatinate. Authentic, unadorned, precise.
