Wine information
Physiologically highly ripe grapes were harvested from our own selection of Saint Laurent vines on 9 September 2021. This was followed by a macération semi-carbonique over six months in Kvevri, after which the wine was matured for 4 months on the lees without intervention in 500-litre acacia wood tonneaux. Bottling took place without fining with 25 mg/L sulphites in March 2023. The pH value is 3.2, the residual sugar is 1 gram.
Color
Cloudy, bright ruby red
Nose
Zillinger's NUMEN Rosé is a delicate, light-coloured red wine from vines over 100 years old. It smells of dried purple flowers, sour cherries and cherry stones, red berries and stony minerality. There are also notes of laurel, some undergrowth and a hint of allspice d'Espelette.
Palate
On the palate, the wine is charming and inviting with a silky tannin and an acidity that invites you to take another sip. What is particularly pleasing is the mixture of sweet berry fruit and tart and slightly earthy notes. This is a lively wine of great inner harmony, which is also rather delicate and yet lingers on the palate for a long time.
