Colour & Appearance
Pale straw yellow with vibrant green reflections – a visual promise of freshness and precision.
Nose
This Sauvignon Blanc announces itself unmistakably: disciplined, sharply defined, without affectation. Fully ripe yellow fruit and tropical notes meet a herbaceous, spicy aromatics of passion fruit leaf, star fruit and freshly mown grass. Distinctly bitter grapefruit zest lends tension, whilst a distinctively saline note provides depth. Time and again, fruits alternate with culinary herbs: chervil, borage, lemon balm. A serious, intellectual Sauvignon with matter-of-fact character.
Palate
Fruity-herbal on the attack, with juicy extract and crumbly phenolics that lend substance and grip. The wine rushes across the palate like a cool mountain stream – lively, refreshing, precise. The juicy yellow fruit and grapefruit aromas are accompanied in herbaceous, spicy fashion by fine notes of lemon balm and ground elder. The fresh acidity stretches like a taut bow across the entire palate.
Finish
Saline-herbal in definition with lingering presence. The mineral component dominates the long, cool finale – a wine that leaves an impression.
Terroir & Origin
The grapes come from the renowned Terlan vineyard site Lieben Aich, a south-west facing slope at 300 metres altitude. The soils of sandy loam on weathered porphyry lend the wine its characteristic minerality and saline character.
Grape Variety & Vinification
100% Sauvignon Blanc, crafted vinification: The destemmed grapes underwent a twelve-hour skin contact period for additional extraction and texture. Spontaneous fermentation in wood, followed by nine months ageing on fine lees – a method that promotes complexity and creamy texture without masking the varietal freshness.
Food Pairing Recommendations
Ideal with scallops with herb butter, pan-fried monkfish, goat’s cheese salad with grapefruit or asparagus with Hollandaise sauce. The saline minerality harmonises beautifully with oysters and seafood.
