  • 👅 Palate: On the palate, it reveals juicy, dark-berried fruit and fine spice, supported by a gentle tannin structure, round fullness and an invigorating, fresh vitality.

Colour & Appearance
A luminous garnet red of inviting, light transparency.
Nose
The wine opens with a fascinating, earthy spice. Intense notes of black olive tapenade and liquorice marry with the typical scents of the southern French garrigue and wild herbs. Behind this lies a dark, cool fruit of blackberries, tart sloe and an elegant touch of violet.
Palate
On the palate, the winemaker’s signature is revealed par excellence: here, the irrepressible power of the South meets an almost hovering freshness. Dark-berried and spicy, equipped with fine, grippy tannins, the wine simultaneously possesses a wonderful suppleness and juiciness. A lively interplay of dark fruit, herbal spice and a fine, chalky structure that lends the wine immense tension.
Terroir & Origin
The grapes ripen in the Terrasses du Larzac (Jonquières, Languedoc). The Grenache vines stand on a mosaic of quartz, limestone scree and large river pebbles, while the Carignan parcel is significantly shaped by barren limestone gravel. A unique microclimate, surrounded by wild laurel forests, which lends freshness to the vines.
Grape Variety & Vinification
A cuvée of Grenache and Carignan. Florian Busch relies on a macération semi-carbonique with a proportion of 35% whole bunches. The wine is spontaneously fermented with wild yeasts and matures for seven months before being bottled unfined and unfiltered with minimal sulphur addition.
Food Pairings
Excellent with braised leg of lamb with thyme, a classic Provençal ratatouille or wild rabbit with olives and rosemary.
