Colour & appearance

Brilliant golden yellow with fine, persistent strings of pearls that reflect the remarkable maturity on the lees. The transparency at the edge of the glass shows the precision of the terroir.

Nose

A fascinating bouquet of astonishing complexity. Roasted hazelnuts and Brioche blend with citrus peel and a hint of flint - a direct translation of the limestone, sand and flint subsoils of the three lieu-dits in Œuilly. Ripe yellow fruit and subtle oxidation notes develop on contact with the air, testifying to the long ageing in the bottle.

Palate

The true mastery of this champagne is revealed on the palate. Razor-sharp and precise, with a breathtaking tension between the ripe fruit of the warm 2009 vintage and the crystalline acidity structure. The dosage of zero grams emphasises the purity of the expression. The texture is silky and at the same time minerally and grippy - a paradox that only great terroir champagnes can master. The finish is impressively long, with salty notes and a subtle bitterness reminiscent of almonds.

General information

This champagne is a triumvirate in the truest sense of the word - a harmonious blend of three unique terroirs from Œuilly in the Vallée de la Marne. The 58% Chardonnay and 42% Pinot Noir were cultivated with minimal intervention, fermented spontaneously and matured for 10 months in Burgundian oak barrels, without malolactic fermentation. After bottling in May 2010, the wine matured for an impressive 12 years and 9 months on the lees before being disgorged in January 2023.

Food recommendations

The intensity and complexity of this champagne calls for sophisticated accompaniments. Excellent with matured Comté, Fried scallops with hazelnut butter or Porcini mushroom risotto. The salty minerality harmonises perfectly with Oysters or Caviar.

With only 2,800 bottles produced, this champagne is a rarity. The exceptionally long ageing on the lees and the zero dosage make it an uncompromising expression of the terroir and the 2009 vintage.
