Wine Description for Terroirs Épanouis #1 Base 2015 Premier Cru Extra Brut by Lacourte-Godbillon

Colour & Appearance
Intense straw yellow with copper-coloured reflexes, indicating the extended maturation period. The mousseux presents itself relaxed and fine-bubbled – a sign of over six years‘ bottle ageing.
Nose
Remarkably complex and deep. Quinces, red and yellow apples and plums dominate the bouquet. These are joined by fascinating notes of Fino Sherry and crushed stone – an aromatic profile that perfectly unites maturity and terroir character.
Palate
Initially elegant and positively relaxed with ripe fruit and fine mousseux. Yet then an impressive tension unfolds: acidity and minerality permeate the vinous character with authority. A fine tannin from the high Pinot Noir content lends the Champagne characteristic edges and noble structure. Here the true class of this Terroir d’Ecueil reveals itself.
Finish
Long, mineral and with sustained tension. The combination of maturity and freshness resonates sustainably.
Terroir & Origin
The vines are rooted in the sandy soils with loose clay of Ecueil in the Montagne de Reims. This Premier Cru terroir imparts the wine with its characteristic minerality and depth.
Grape Variety & Vinification
Assemblage of 85% Pinot Noir and 15% Chardonnay, with 56% from the base vintage 2015 and 44% from reserve wines. The base wine underwent spontaneous fermentation and was aged for nine months in stainless steel and wood (approximately 11%) – without stabilisation, filtration or fining. Following bottling in July 2016, the Champagne matured for six years sur lattes and was disgorged in November 2022. With only 1.5g dosage, a truly authentic Extra Brut.
Food Pairing Suggestions
Perfect with a seafood platter with chipotle mayonnaise, charred black octopus on chickpea mousse or a Comté soufflé. The structure and vinous character also complement bolder flavours.
