Wine Description for Cabernet Sauvignon 2022 from Weingut am Klotz

Colour & Appearance
Deep purple with violet reflections and bright rim, luminous and clear in the glass – a youthful, promising Cabernet that reveals its origins from a cooler climate.
Nose
Pure, concentrated Cabernet fruit in impressive breadth: blackcurrant, elderberry, blackberry and morello cherry form a deep, opulent aromatic spectrum that remains elegant and cool nonetheless. Floral notes of violet and hibiscus meet warm leather tones, black pepper and the varietal-typical red pepper. A hint of smoke and tobacco deepens the complexity, whilst oregano and sage contribute Mediterranean herbal spice. Delicate traces of white pepper and anise in the finish.
Palate
Surprisingly supple and juicy for a young Cabernet – here the winemaker’s signature shows a preference for elegance over power. The tannin remains fine-grained and silky, currently still overlaid by the fruit. The acidity sets a precise counterpoint, lending structure and freshness. Remarkable are the mentholated and ethereal hints of mint and eucalyptus, which appear as cool counterpoints to the dark fruit. A noble, silky overall impression with considerable lightness at 13% alcohol.
Finish
Medium to long, with subtle spicy accents that emerge in the aftertaste. The fruit depth and floral notes remain present, carried by fine minerality.
Terroir & Origin
The vines thrive at 369 metres elevation in the vineyard site Isteiner Kirchberg on Jurassic limestone deposits between the Rhine Graben and the southern Black Forest. The almost Mediterranean warmth of this region offers Cabernet Sauvignon ideal conditions for complete ripeness.
Grape Variety & Vinification
Matured in French oak barrels, of which 30% new wood – used subtly so as not to overpower the fruit. The vinification aims for finesse and drinkability rather than extraction and power.
Food Pairing Suggestions
Lamb rack with herb crust, beef fillet with pepper sauce, braised ox cheeks, aged hard cheese or Mediterranean vegetable gratin with aubergines and courgettes.
