Wine Description for Il Passito di Corzano IGT 2008 375ml by Corzano e Paterno

Colour & Appearance
Luminous amber with golden reflections, bearing witness to the extended ageing and the appassimento method. The viscosity is already evident in the glass through pronounced church window effects.
Nose
An opulent aromatic spectrum of impressive complexity: roasted hazelnuts and almonds dominate, accompanied by dried figs, dates and raisins. These are joined by candied orange peel, salted caramel and toffee. A subtle tobacco note and elegant volatile acidity lend depth and tension to the bouquet.
Palate
The orchestral acidity is the heart of this extraordinary passito – it masterfully balances the sweetness and lends the wine elegance rather than heaviness. Silky-viscous texture with vibrant freshness, nutty aromatics with saline contours. Citrus oils, bitter oranges and orange zest provide balsamic complexity.
Finish
Of impressive length with ambrosial aftertaste. The aromas linger for minutes, carried by the lively acidity structure, which guarantees freshness and elegance right to the end.
Grape Variety & Vinification
From selected Trebbiano and Malvasia grapes, dried for three months in the vinsantaia. After further selection, 24-hour pressing, then maturation on the mother yeast in traditional caratelli (50-100 litre barrels) for a remarkable 17 years without any intervention in the well-ventilated vinsantaia.
Food Pairing Recommendations
Excellent with cantuccini and almond biscotti, aged pecorino or Parmigiano Reggiano. Superb with crème brûlée, apple strudel or pear tart. Also delightful on its own as a meditative glass after dinner.
Special Features
Due to DOC regulations from 1995, not classified as Vin Santo, as the alcohol content falls just short of 13.5% – a wine where finesse takes precedence over power. The 17-year barrel ageing without intervention is extraordinary and lends this passito a rare complexity and maturity.
