Wine Description for Herxheimer Honigsack Spätburgunder IG 2024 from Odinstal

Colour & Appearance
A medium garnet red in the glass, which underscores the moderate extraction and elegant approach of this debut Spätburgunder. The colour promises finesse rather than power.
Nose
Remarkably open and inviting, this first wine from Odinstal presents itself with considerable charm. The nose reveals ripe wild strawberries, raspberry preserve and sweet cherries, complemented by a delicate note of violet flowers. Added to this are sweet yeast and subtly deployed oak with a hint of vanilla. The aromatics recall a fascinating liaison between Jurassian Pulsard and Pinot Noir, yet with the characteristic Palatinate warmth and sweetness.
Palate
On the palate, the open-hearted, approachable character reveals itself in full splendour. Notes of cherries and raspberries dominate, accompanied by a fine violet note and a sweet core. The acidity is fresh yet roundly integrated. The precisely selected oak brings subtle spice notes to the wine. The tannin is perceptible yet finely woven – the wine has depth whilst remaining weightless. Despite its complexity, it invites generous, pleasurable drinking in large gulps.
Finish
Medium length with persistent fruit and an elegant, spicy note that lingers.
Terroir & Origin
The Herxheimer Honigsack lies at approximately 250 metres elevation in the Palatinate. The distinctive terroir is characterised by a roughly 30-centimetre thin soil layer over a solid tertiary limestone bedrock – a sparse, mineral substratum that lends the wine precision and tension.
Grape Variety & Vinification
The Spätburgunder vines planted in 2008 were 30% destemmed and subsequently spontaneously fermented. Vinification took place without pumping over approximately ten days, rather like a tea infusion – a gentle approach that explains the elegance and drinkability of this wine.
Food Pairing Recommendations
Pairs excellently with roasted duck, veal schnitzel with mushroom cream sauce, Coq au Vin or a mature Comté. Also a fascinating accompaniment to salmon trout or tuna tataki.
