- The Herxheimer Honigsack lies at approximately 250 metres elevation in the Palatinate. The distinctive terroir is characterised by a roughly 30-centimetre thin soil layer over a solid tertiary limestone bedrock – a sparse, mineral substratum that lends the wine precision and tension.
- Grape Variety & Vinification
- The Spätburgunder vines planted in 2008 were 30% destemmed and subsequently spontaneously fermented. Vinification took place without pumping over approximately ten days, rather like a tea infusion – a gentle approach that explains the elegance and drinkability of this wine.
