Colour & Appearance
Medium straw yellow with vibrant reflections – a classic Burgundy dress that promises freshness and elegance.
Nose
Fascinatingly reductive, without being intrusive: A subtle smokiness envelops the white-fleshed fruit like a veil. Pears and greengage plums dominate, accompanied by exotic hints of pineapple and the freshness of lime zest. Beneath lie mineral notes of limestone and petrichor – that earthy scent of rain on dry stone. A whisper of pastry rounds out the aromatic profile.
Palate
Straightforward and juicy, this Saint-Romain presents itself with distinction. The subtle oak influence reveals itself as spicy texture, never obtrusive. Green and yellow pears return, complemented by citrus peel and pineapple. The lees ageing notes impart a creamy dimension that harmonises perfectly with the crisp acidity structure. At 12.5% alcohol, the wine remains wonderfully drinkable and balanced.
Finish
Medium-length with persistent freshness, mineral precision and a lingering echo of citrus fruits and fine spice.
Terroir & Origin
The vineyard site Perrière owes its name to the omnipresent limestone stones. 40-year-old vines at 320-350 metres altitude, east-facing on a hillside opposite the Saint-Romain valley. The calcareous subsoil (Colluviol sur Calcaire) profoundly shapes the mineral signature of this wine.
Grape Variety & Vinification
Chardonnay in pure form, hand-harvested and whole-bunch pressed. Spontaneous fermentation and malolactic fermentation in various vessels: 228-, 350- and 500-litre barrels, concrete eggs and WineGlobes with a maximum of 10% new oak. Daily monitoring by Frédéric Buisson, minimal fining with bentonite, coarse filtration. Sulphuring only at bottling (40-50 mg/l). Biodyvin-certified.
Food Pairing Suggestions
Excellent with saag paneer with coconut milk, honey-glazed mushrooms with udon or Moroccan lemon chicken. The creamy texture and freshness make it an ideal companion to spiced vegetarian dishes and aromatic poultry preparations.
