Colour & Appearance
Luminous golden yellow with copper reflections that reveal the Pinot dominance. Fine, persistently rising perlage with creamy mousse – a result of the reduced 4.5 bar dosage.
Nose
Complex bouquet of red berries, particularly strawberry and raspberry, interwoven with notes of roasted hazelnuts and brioche. Subtle hints of stone fruit and a fine chalky minerality reminiscent of Champagne soils. With air, a delicate spice and a whisper of orange zest emerge.
Palate
Precise and taut on the attack, with impressive structure and depth. The Extra Brut dosage (under 6 g/l) allows the pure fruit to speak: red currants, wild strawberries, underpinned by a mineral saltiness. Creamy texture despite the fine perlage, carried by vibrant acidity and an almost Burgundian vinosity. Remarkably clear and unadorned.
Finish
Long and energetic, with sustained minerality and a hint of toasted bread. The acidity remains present without ever becoming aggressive – a sign of perfectly crafted base wines.
