Wine Description for Racines de Trois Brut T21 by Waris-Larmandier

Colour & Appearance
Pale golden yellow with fine, persistent perlage. The bubbles rise elegantly and evenly – a first indication of the deliberately lower carbonation of 4.5 bar instead of the customary 6 bar.
Nose
Clear, restrained aromatics with fresh brioche, green apple and citrus peel. Mineral notes of chalk and salt underscore the Grand Cru provenance from the Côte des Blancs. With a little air, subtle hazelnut tones and a fine yeasty spice develop.
Palate
Precise and linear. The reduced carbonation lends the Champagne a creamy, almost silky texture without sacrificing freshness. White peaches, lemon and pronounced minerality dominate. The acidity is lively yet perfectly integrated – a sign of meticulous base wine production. Despite the multi-vineyard cuvée of Chardonnay and Pinot Noir, there is a remarkable clarity and focus.
Finish
Medium to long, with persistent salinity and a fine citrus echo. The chalky minerality remains present and leaves a dry, appetising impression.
Terroir & Origin
An assemblage from several Grand Cru vineyard sites of the Côte des Blancs around Avize, complemented by parcels from the Montagne de Reims and the Côte des Bar. Biodynamic cultivation according to Demeter standards since 2009 allows the soils to shine through authentically.
Grape Variety & Vinification
Cuvée of Chardonnay and Pinot Noir from old vines. Jean-Philippe Waris‘ philosophy is evident in the meticulous base wine production and the deliberate choice of only 4.5 bar pressure, which gives the Champagne greater texture and accessibility.

Excellent as an aperitif or with raw oysters, scallop carpaccio, sushi and sashimi. Also an elegant accompaniment to goat’s cheese or lightly smoked fish.
