The Foradori family are among the pioneers of biodynamic viticulture in Trentino and have created with this Nosiola a fascinating example of the revival of indigenous grape varieties. The Fontanasanta presents itself as a crystal-clear, vibrant white wine with moderate alcohol content that reflects the alpine freshness of its origin. The Nosiola grape reveals here its fine-boned elegance and mineral precision – a wine that combines substance with drinkability.
Terroir & Origin
Trentino, nestled between the Dolomites and Lake Garda, offers ideal conditions for this rare grape variety. The vineyards benefit from cool nights and warm days, which give the Nosiola its characteristic acidity structure and aromatic finesse. Foradori manages the vineyard sites according to biodynamic principles, which is reflected in the vibrancy and authenticity of the wine. The soils of alluvial deposits and limestone shape the mineral signature of this wine.
Grape Variety & Vinification
Nosiola is one of the oldest indigenous grape varieties of Trentino and was long underestimated. In the hands of Elisabetta Foradori, the variety reveals its true potential: delicate hazelnut notes (hence the name, from „nocciola“ – hazelnut), white flowers, citrus fruits and pronounced minerality. Vinification is carried out respectfully and with restraint, in order not to obscure the purity of the fruit and the expressiveness of the terroir. The moderate alcohol content of 12% underscores the elegant, unobtrusive style of the house.
Food Pairing Recommendations
This Nosiola is a versatile companion to regional Trentino cuisine: It harmonises wonderfully with freshwater fish from the Alpine lakes, trout or char, but also with asparagus, goat’s cheese and light herb-based pasta dishes.
