Wine description for Fontanasanta Manzoni Bianco Vigneti delle Dolomiti IGT 2025 by Foradori

Character
The Fontanasanta Manzoni Bianco by Elisabetta Foradori is a white wine with a clear signature: dry, precise and brimming with vibrant tension. With 12.5% alcohol, it remains lean and elegant – a wine that prioritises freshness and depth over richness. It embodies Foradori’s consistent philosophy of natural, artisanal winemaking that lets the terroir speak without overworking it.
Terroir & Origin
The vineyards lie in Trentino, nestled between the foothills of the Dolomites – one of Italy’s most spectacular and climatically distinctive wine landscapes. The alpine continental climate with cool nights, intense sunshine and marked temperature swings between day and night creates natural acidity and aromatic precision. The Foradori estate ranks among the defining addresses of Trentino and has played a decisive role in anchoring the region internationally on the map of serious wine culture.
Grape Variety & Vinification
Manzoni Bianco – a cross between Riesling and Pinot Bianco, developed in the 1930s by Luigi Manzoni at the Conegliano wine school – is a variety that has found a true home in Trentino. It combines the aromatic vibrancy and acidity structure of Riesling with the texture and roundness of Pinot Bianco. Foradori vinifies in keeping with her biodynamic conviction: minimal intervention in the cellar, respect for the natural rhythm of the fruit. The ageing aims for clarity and authenticity rather than pleasing opulence.
Food Pairing Suggestions
A versatile companion to alpine and Mediterranean cuisine. Excellent with risotto with wild herbs, grilled trout or char fillet and goat’s cheese from Trentino. It also unfolds its elegant precision alongside asparagus with herb vinaigrette or light pasta dishes with vegetables. Those who enjoy it on its own – as an aperitivo on a terrace with a view of the Dolomites – are equally well served.
