Wine Description for Chablis Grand Cru Vaudésir AOC 2023 from de l’Enclos
- Colour & Appearance
- Pale, lemon-yellow luminosity in the glass – classic for young Chablis Grand Cru with youthful freshness and clarity.
- Nose
- The 2023 Vaudésir shows itself somewhat reserved following its recent bottling, yet the aromatic palette promises development potential: green ripe fruits and lime zest dominate, accompanied by herbs, lemon juice and the typical salty lemon that announces the mineralic terroir of Vaudésir. These are joined by yeast notes, subtle oak and an exotic hint of pineapple.
- Palate
- On the palate, the wine reveals its true class: a fine, bright juiciness meets impressive smoothness and pleasant density. The texture is silky and elegant, expressing great finesse. The creamy structure harmonises perfectly with citric accents and that subtle pineapple note already hinted at on the nose.
- Finish
- The finale impresses with salty minerality and lingering juiciness. Herbal notes and perfectly integrated oak lend length and complexity to the finish – a classic Vaudésir fingerprint.
- Terroir & Origin
- The grapes come from 0.57 hectares in the legendary Grand Cru Vaudésir, positioned precisely at the distinctive, deeply incised valley. The vines were planted in 1992 by the father of the Bouchard family and benefit from the unique Kimmeridge limestone site that gives Chablis its unmistakable mineralic character.
- Grape Variety & Vinification
- 100% Chardonnay, hand-harvested and slow whole-bunch pressing. Spontaneous fermentation in used tonneaux preserves fruit clarity and avoids excessive oak notes. Ageing also in wood, coarse filtration and light sulphiting – a respectful, terroir-oriented approach.
- Food Pairing Recommendations
- A Grand Cru for discerning pairings: scallops with citrus butter, lobster or langoustines, pan-fried turbot, oysters (warm or cold), goat’s cheese of medium maturity or classic Poulet de Bresse with cream sauce.
- Special Features
- An authentic Grand Cru from a small producer who preserves the signature of his terroir. The 2023 still needs some time to open fully – a wine with excellent ageing potential for the next 8-12 years.
