- Pale, clear lemon yellow with a fine lustre – youthful and fresh in the glass, entirely befitting the cool minerality of Chablis.
- Nose
- The nose is still somewhat closed, as is typical of a wine shortly after bottling – yet what emerges is most promising: green, ripe fruits, lime zest and a hint of salted lemon alternate with fresh herbs, a squeeze of lemon juice and delicate yeast notes. In the background lurks a discreet suggestion of pineapple and a barely perceptible oak aroma. There is still something sleeping here – and it is worth the wait.
- Palate
- On the palate, the Vaudésir unfolds with elegant, bright juiciness that immediately delights. Smoothness and silkiness carry the wine without making it heavy – the texture is creamy, the fruit citric and precise, with a charming return of pineapple notes. Density and elegance maintain a remarkable balance.
- Finish
- The finale is long, saline and juicy – the very hallmark of Chablis’s Kimmeridge soils. A fine herbal spice and well-integrated oak round out the finish, lending it depth without heaviness.
- Terroir & Origin
- The grapes come from a 0.57 hectare parcel share in the Grand Cru Vaudésir, planted in 1992, precisely where the characteristically deep-cut valley of Vaudésir opens out. A place that does not merely promise minerality and tension, but demands it.
- Grape Variety & Vinification
- Pure Chardonnay, hand-harvested and gently pressed as whole bunches. Fermentation occurred spontaneously in used tonneaux – without intervention, without haste. Following maturation, only coarse filtration and restrained sulphiting followed. Craftsmanship that consciously stays out of the way.
- Food Pairing Suggestions
- An ideal companion to lobster with beurre blanc, scallops on pea purée or a classic sole meunière. Also a revelation with aged Comté or an elegant chicken in cream sauce.
