Wine Description for Pommard AOC 2019 from Clos du Moulin aux Moines

Colour & Appearance
Lightly transparent brick red with Burgundian elegance – a wine that reveals its maturity and finesse already in the glass.
Nose
Impressively transparent and almost ethereal, this Pommard presents itself: violets and roses meet subtly roasted red and dark berries, especially blackcurrant. Beneath lies warm forest floor with moss and twigs, accompanied by fine notes of oak, cinnamon, smoke and leather. Despite its earthy components, the nose is remarkably airy and delicate.
Palate
On the palate, the wine reveals its true character: clearly structured and noticeably more earth-bound than on the nose. An almost romantic note of goût de campagne – that rustic earthiness which characterises Pommard – combines with dark cherries, floral hints and mint. The tannins are more present than in other wines from the domaine, lending the Pommard firmness and structure without compromising elegance. A typical, harmonious representative of its appellation.
Finish
Medium length with persistent fruit and fine tannin structure that calls for food.
Terroir & Origin
A blend from four parcels: Croix Planet brings richness, the old vines in Les Vaumuriens and Les Vignots (planted 1947, 1983, 1988, 1999) contribute finesse and structure, whilst La Vache provides minerality. The vines stand on clay-limestone soil at 270 to 362 metres altitude – classic Pommard terroir.
Grape Variety & Vinification
Pinot Noir, hand-harvested and partially destemmed. Spontaneous fermentation, followed by 12 to 15 months ageing in Pièces and Tonneaux with less than 10% new oak – a restrained use of wood that respects the fruit and terroir.
Food Pairing Suggestions
Sirloin of lamb with Provençal herb crust, roasted young duck with verbena, chard and cherries or fillet strips with porcini from the wok – the wine demands substantial, aromatic meat dishes.
