Wine Description for Chaillots Premier Cru Extra Brut 2015 by Lacourte-Godbillon

Colour & Appearance
Deep straw yellow with onion-skin reflexes. The perlage presents itself as exceptionally fine and persistent – almost reminiscent of stardust rather than ordinary carbonation.
Nose
A Champagne that takes its time, revealing itself layer by layer. Initially, five and a half years of yeast ageing dominate: rye sourdough bread, toast and salted butter create a complex foundation. With air contact, wild raspberries and strawberries emancipate themselves, accompanied by ethereal blood orange notes. Mineral accents of oyster shells and wet slate round off the multi-layered aromatic profile.
Palate
The subtle perlage illuminates a powerful, red-fruit-focused Champagne with impressive structure. Ripe, expansive acidity lends tension and freshness. Multi-layered and distinctive – this is no aperitif Champagne, but a wine with clear table vocation.
Finish
Long, precise and taut with lingering fruit aromas and mineral resonance. The autolysis notes remain elegantly present.
Terroir & Origin
Premier Cru vineyard site Chaillots in Ecueil, Petit Montagne de Reims. The 55-year-old Pinot Noir vines are rooted in sand and tuff stone – a terroir that clearly reflects itself in the wine’s mineral precision.
Grape Variety & Vinification
100% Pinot Noir, hand-harvested and aged in used 300-litre barrels. Five and a half years of cellar maturation, disgorged in December 2021. Set as Extra Brut with only two grams of dosage. The winery has been working organically since 2016.
