Tasting note
Colour & Appearance
Pale golden yellow with slightly green reflections – a classic Chablis profile that promises freshness and youthfulness.
Nose
Initially, a reductive note emerges, reminiscent of freshly struck matchsticks – a sign of artisanal vinification without excessive sulphuring. After brief aeration, the wine opens with precise aromas of lemon and lime, along with green pineapple. Floral notes of linden blossom and orange blossom lend elegance, whilst wet stone underscores the mineral signature of Kimmeridgian limestone.
Palate
On the palate, a fascinating dichotomy unfolds: whilst the nose appears almost austere, the texture surprises with sensual density and juiciness. The oak – 60% used Demi-Muids – is perceptible but perfectly integrated. Stone and pip fruits harmonise with citrus, underpinned by yeast notes and a smoky-reductive character. The mineral tension and tonic energy run through the wine from start to finish – classic Chablis terroir in its purest form.
Finish
Long, precise and with lingering minerality. The acidity remains lively without being aggressive, and carries the fruit aromas far.
Terroir & Origin
The vineyard site Montmains lies on the left bank of the Serein and forms, together with Fôrets and Butteaux, a Premier Cru hill. The name derives from “Montméee” – a moderately high mountain that was once frost-prone but today plays its fresh side to advantage. Damien Bouchard particularly values Montmains for the health of the vines planted in 1971. The Kimmeridgian limestone and clay soils shape the mineral character sustainably.
Grape Variety & Vinification
100% Chardonnay, hand-harvested on 22 September 2023. Direct pressing, spontaneous fermentation. Maturation over 13 months in 60% used Demi-Muids, 40% in stainless steel tank. Lightly filtered and sulphured, with total sulphur of only 55 mg/l – a commitment to minimalist intervention.
Food Pairing Suggestions
Scallops with lemon butter, oysters, pike-perch with sorrel, goat’s cheese of medium maturity or Comté. The mineral precision calls for clear, not overly heavy flavours.
Special Features
A Chablis that masterfully strikes the balance between Burgundian opulence and Chablis austerity. The old vines and restrained vinification create a wine with depth and ageing potential.
