Anchoring themselves deeply on sandstone-laden loam and fiery red flint on tuffeau, the 45 to 55 year old vines of Cabernet Franc bear fruit.
Process for winemaking
With a limited harvest of 40 hl/ha, meticulous care is maintained by hand picking the grapes in 12 kilo crates. Carefully destemmed, a 30-day fermentation follows with minimal agitation. The preparatory process leads to a twelve-month resting period on fine lees, preceded by additional ageing in Burgundian pièces for five to seven years. The cuvée is then aged in barrels for a further six months.

Scent
In this 2020 Cabernet Franc Clau de Nell, the typical aroma of Cabernet Franc, the dark fruit of blackberry, cassis and green pepper are perfectly displayed. The seductive combination of power and elegance results in an amazing juiciness that is already noticeable on the nose, complemented by a cool, herbaceous note that reveals a rare depth.
Taste
The dark, fruit-filled, juicy taste continues in the mouth. Polished tannin and invigorating acidity leave a smooth impression on the tongue and linger in the aftertaste. This honest, graphite-accented wine is refreshing and pairs well with hearty dishes.

Serve this wine at 16° from a carafe in a large glass.
