Colour & Appearance
Transparent, luminous ruby red with remarkable clarity – classic for Sangiovese and a testament to the precise, minimalist cellar work at Salicutti.
Nose
An almost overwhelming bouquet of fully ripe cherries dominates the nose. Beneath this unfolds a complex spice palette: black cardamom, juniper and bay leaf meld with sandalwood, vetiver and subtle roasted notes. The aromatics are in constant motion – a wine that deserves large glasses and time.
Palate
Impressively juicy on the attack with crystalline cherry fruit. The fine-grained, almost powdery tannins envelop the palate like cashmere. Notes of dark chocolate, coffee cream and light roasted nuances define the precise fruit. The invigorating acidity drives a rapid, hedonistic drinking experience – a Brunello with surprising accessibility despite its complexity.
Finish
Persistent and fresh, carried by the vibrant acidity structure and fine tannins. The cherry fruit lingers, accompanied by spicy undertones.
Terroir & Origin
The Sorgente cru vineyard site sits at 450 metres above an underground spring – hence the name. The heavy clay-sand soils with stony galestro slow ripening and preserve freshness. No hydric stress thanks to the water source, which is a decisive advantage in times of climate change. The result: comparatively lower alcohol (14.5%), fine tannin structure and remarkable elegance.
Grape Variety & Vinification
100% Sangiovese from vines planted in 1994 that have never been exposed to conventional pesticides. Salicutti was Montalcino’s first biodynamically certified estate. Since 2015, Sabine and Felix Eichbauer have continued this uncompromising philosophy.
