- An uncompromised, puristic sparkling wine of impressive rigour and independence. This vintage sparkling wine reveals the unvarnished soul of the grape: taut, energetic and with tangible structure. Renouncing any dosage leaves room for a dense texture, savoury mineral grip and an intense, earthy tartness that stands far removed from the commercial mainstream.
- Terroir & Origin
- Shaped by the radical steep slopes near Brescia in Lombardy, where the estate deliberately eschews the Franciacorta appellation. At an altitude of 320 to 430 metres, the vines are rooted in barren soils of limestone, clay and heavy loam. The constant, namesake winds blowing over the mountain ridges create a microclimate that imparts spectacular freshness and cool tension to the grapes.
- Grape Variety & Vinification
- Single-varietal Pinot Noir, vinified in a radically artisanal manner. The “Pas Operé” method stands for spontaneous fermentation in used wooden casks and seven months on the fine lees without cold stabilisation or filtration. After up to 59 months of lees ageing in the bottle, it is disgorged without dosage – topped up exclusively with wine from the very same batch, underlining the uncompromising signature of Antonio Tornincasa and Flavio Faliva.

- Due to its bone-dry nature and gripping texture, this Blanc de Noir seeks out structured dishes. It shines alongside pan-roasted quail breast, braised veal sweetbreads, oysters with lemon or aged Parmigiano Reggiano.
