Wine Description for MFPC VSQ Brut Pas Operé 2018 by Cà del Vént

Colour & Appearance
Pale golden yellow with fine, elegant bubbles. The mature colour already hints at the 56 months on lees that give this Metodo Classico its characterful depth.
Nose
Seductively complex: golden apples and vanilla on warm puff pastry meet cooler mineral notes of graphite and crushed stone. These are joined by nutshells and lemon zest – a perfect balance between maturity and freshness.
Palate
Lively and expressive. The yellow apples return, accompanied by subtle must and cellar apples, which owe to the slightly oxidative ageing. Intense and juicy with nuances of red berries, lemon pips, almonds and stony minerality. Delicate, elegant, with palpable depth.
Finish
Persistent and mineral-fresh, with fine nuttiness and a saline spice that invites the next sip.
Terroir & Origin
From Lombardy, from two parcels: „M“ with 0.6 ha of Chardonnay at 320 m elevation (south-west facing, yellow-loamy soil) and „F“ with 0.4 ha of Pinot Noir at 380 m (west-facing, yellow-red loamy). Both soils are characterised by high mineralisation and sub-alkaline pH.
Grape Variety & Vinification
A blend of 60% Pinot Noir and 40% Chardonnay. Spontaneous fermentation in used wooden barrels, seven months of ageing. Following bottling in March 2019, an impressive 56-month ageing on lees ensued. Disgorged on 11.12.2023 „pas operé“ – without dosage, only with its own wine. No fining, filtration or cold stabilisation. Artisanal, purist winemaking.
Food Pairing Suggestions
Excellent with roasted turbot, scallops, risotto with porcini mushrooms, calf’s sweetbreads or aged hard cheese such as Parmigiano Reggiano. The oxidative note also harmonises beautifully with nut pastries or almond tart.

An authentic zero-dosage sparkling wine that uncompromisingly showcases terroir and craftsmanship. The abbreviation MFPC stands for the parcels M and F as well as the grape varieties Pinot and Chardonnay – a wine with character and narrative.
