Wine Description for Blanc de Blanc VSQ Pas Operé 2017 by Cà del Vént

Colour & Appearance
Luminous golden yellow with fine, persistent perlage – a visual testament to the extended ageing of 59 months on the lees.
Nose
A fascinating duality of maturity and freshness: crushed chalk and limestone meet lemon juice and zest, complemented by bitter orange peel, grapefruit and almond croissants. A subtle Manzanilla note adds further complexity.
Palate
Here reveals itself the true personality of this extraordinary sparkling wine: the deliberately oxidative character evokes aged Jura Chardonnay with hints of Vin Jaune. Tart cider apples and walnuts merge with preserved lemons, aged hard cheese and bitter oranges. The vibrant acidity builds enormous tension and holds the oxidative notes in perfect balance. Deep, complex, mature – and yet remarkably agile and fresh.
Finish
Long, mineral and characterised by persistent freshness, with lingering notes of citrus and chalk.
Terroir & Origin
The grapes hail from south-west-facing parcels between 360 and 430 metres altitude in Lombardy. The soils – yellow to deep dark loam with white active limestone – impart the wine’s distinctive mineral character.

Pure Chardonnay made in the Méthode Classique. Spontaneous fermentation in used wood, seven months maturation, then 59 months on the lees. Pas Operé disgorged – without dosage, only with its own wine. No cold stabilisation, no filtration, no fining. Purism in perfection.

A wine for the discerning table: scallops with nut butter, smoked char, Comté or aged Gruyère, calf’s sweetbreads with morels, lobster or langoustines in lemon butter. A revelation on its own as well.
