In the glass

  1. Colour

Pale yellow with distinct green reflections.

  2. Nose

Initially earthy, slate-driven hints; after aeration, apricot, lime, green apple, exotic gooseberry and pronounced cassis.

  3. Palate

A lively interplay of sweetness and acidity, pronounced spiciness and fine grip — wonderfully inviting to drink at a moderate 8.5% vol.

  4. Character

A finely structured, luscious Mosel Kabinett with depth and structure — delicious already now, yet it reveals its full complexity only with further bottle age.

  5. Pairing

Asian dishes with mild heat, fresh goat’s cheese with honey or fruity desserts such as apricot tart.

  6. Notes

Spontaneous fermentation without fining or clarifying agents, aged in exactly one traditional Mosel Fuder. The vines are rooted in grey, finely weathered slate on a rediscovered steep slope — moreover, Weiser-Künstler tend over 80% ungrafted Riesling vines, some of them more than 100 years old.

Tasting note

Colour & appearance
Pale yellow with distinct green reflections – a youthful, clear appearance that mirrors the freshness of the 2025 vintage.
Nose
Initially closed and entirely devoted to its vineyard site: earthy, slatey nuances that positively demand a carafe. With air, a dense bouquet of apricot, lime and green apple opens up, accompanied by exotic gooseberry and pronounced cassis. Even now one can sense the depth that will lend this Kabinett even more facets as it matures.
Palate
Luscious sweetness and taut acidity dance together here – framed by a pronounced spiciness and fine grip. At just 8.5% abv, the wine remains feather-light without ever seeming thin. Pure drinking pleasure, yet underpinned by serious structure.
Finish
Long and mineral-driven, with lingering fruit and a spicy aftertaste that once again clearly reveals its slate origins.
Terroir & origin
The Wolfer Sonnenlay lies in a steep side valley of the Mosel within the village bounds of Wolf – a top vineyard site long forgotten, characterised by grey, finely weathered slate. Weiser-Künstler cultivate two smaller parcels here. Konstantin Weiser and Alexandra Künstler are career changers who have been working their four hectares on the Middle Mosel entirely independently since 2005 – on steep slopes where every touch remains manual labour.
Grape variety & vinification
Pure Riesling, spontaneously fermented without the use of fining or clarifying agents. To halt fermentation, the wine is racked into a cooler section of the cellar; the entire vintage fills exactly one Fuder (large cask) – bottling took place as early as April.
Food recommendations
The luscious sweetness calls for contrast: spicy Asian dishes, fiery Thai cuisine or duck with fruit glazes. It also strikes a delightful note alongside ripe blue cheese – or simply on its own on a mild summer evening.
Special features
A wine from a single Fuder – it hardly gets smaller than that. Moreover, it comes from a vineyard site that only became visible again thanks to the attention of this career-changing couple. The wise owl on the antique-blue Schlegel bottle watches over a Kabinett that already brings joy now, yet whose full potential will only be revealed in the years to come.
