In the glass

  1. Colour

Pale yellow with distinct green reflections.

  2. Nose

Green apple, lime and sugar-tossed grapefruit meet elderflower, accompanied by fine hints of white pepper and cool slate.

  3. Palate

Pronounced, vibrant acidity carries bright yellow fruits and citrus notes; the delicate sweetness perfectly rounds off the slender, mineral overall impression.

  4. Character

An inviting, slender Kabinett in the classic Mosel style — elegant, refreshing and, thanks to its low alcohol, effortlessly enjoyable.

  5. Pairing

Ideal with Asian dishes of mild spiciness, herb-filled summer rolls or a light goat’s cheese salad.

  6. Notes

The Ellergrub is planted 100% with ancient, ungrafted vines. Spontaneous fermentation in a traditional 1,000-litre Fuder cask, without fining or clarification agents — complemented by organic farming and manual labour on the steep slopes.

Tasting note

Colour & appearance
Pale yellow with distinct green reflections – youthful, clear and cool in impression.
Nose
From the very first sniff it dances out of the glass: green apple, lime, grapefruit tossed in sugar and elderflower. Fine hints of white pepper and cool slate join the dance enticingly.
Palate
Pronounced, finely chiselled acidity sets the saliva flowing immediately. Bright yellow fruits and citrus dominate, while the gentle residual sweetness rounds off the picture perfectly. A slender Kabinett with mineral expression – and at just 8.0 % vol. as light-footed as the whole world envies the Mosel for being.
Finish
Cool slate tones, a citrus streak and a sweet-salty tension that lingers long.
Terroir & origin
The Enkircher Ellergrub is one of the rare terraced steep vineyard sites on the Middle Mosel, planted entirely to 100 % ancient, ungrafted vines – Riesling on blue and grey Devonian slate, with gradients of up to 70 % demanding pure manual labour. Less famous than the region’s great crus, it possesses the same potential for truly outstanding Mosel Rieslings.
Grape variety & vinification
Pure Riesling, spontaneously fermented without fining or clarifying agents in a traditional 1,000-litre Fuder; after fermentation was halted – which gives the residual sweetness its gentle profile – the wine continues to mature in the same cask.
Food recommendations
The sweet-acid tension calls for contrast: spicy Asian dishes such as Pad Thai or Vietnamese summer rolls, hot curry, sushi or a mild goat’s cheese.
Special features
Konstantin Weiser and Alexandra Künstler arrived on the Mosel in 2005 as newcomers without any family tradition – today they cultivate four hectares, over 80 % of which are ungrafted vines, many of them more than 100 years old. Organic farming, complete control from vineyard to labelling: this Kabinett is the sensual proof that sometimes all it takes is courage and infinite care to make old vines sing.
