Tasting note
Colour & Appearance
Radiant, deep straw-yellow with a fine-beaded, persistent mousseux that reflects its extended ageing period in the glass.
Nose
An aristocratic interplay of aromas featuring ripe yellow apple, dried citrus zest and fresh brioche. Underneath, subtle notes of toasted almonds, ripe quince jelly and a touch of wild thyme emerge.
Palate
On the palate, this Cava presents itself as uncompromisingly dry, crystal-clear and direct. The cuvée of Xarel·lo and Macabeu combines a sinewy, cool acidic structure with the creamy texture derived from years of lees ageing. Saline minerality and notes of smoked almonds define the mouthfeel.
Finish
Exceptionally long, taut and brimming with impressive freshness. A chalky, sea-salt-like reverberation with a subtle bitter edge provides a striking conclusion.
Terroir & Origin
The grapes originate from the historic family estate Can Prats in the Alta Penedès. At an altitude of 200 to 400 metres, the vines take root in highly calcareous soils. The Mediterranean climate with cool nights in the Anoia Valley preserves the vibrant acidity.
Grape Variety & Vinification
Crafted from the flagship Catalan grape varieties Xarel·lo and Macabeu. As a pioneer of biodynamic viticulture, Vins El Cep focuses on sustainable craftsmanship. Made by the traditional method, the wine aged for over 60 months on the lees. As a Brut Nature, this sparkling wine was bottled without any dosage.
Food Pairings
A magnificent partner for Ibérico ham, pristine sashimi, freshly shucked oysters or aged Manchego cheese.
Particularities
Spain’s historically first Demeter-certified Cava, produced as an »Elaborador Integral« – an uncompromising single-vineyard sparkling wine with exceptionally long lees ageing that elevates Catalan tradition into the absolute world class.
