Wine Description for Turo d’en Mota Brut Nature 2011 by Recaredo

Colour & Appearance
Luminous golden yellow with delicate greenish reflections. The fine, consistent bead displays remarkable persistence – a visual testament to the extraordinary maturity of this sparkling wine.
Nose
An aromatic profile that shatters conventional Cava expectations. Rather than primary fruit, mature secondary aromas dominate: turmeric, khaki, apricot and mirabelle merge with clove and allspice into an almost Oriental complexity. Beneath: cool, maritime notes of sea spray and oyster shell, rock salt and dried herbs. The 150-month yeast ageing leaves subtle traces, yet chalky, stony elements remain dominant. A mature, self-assured wine of impressive coolness.
Palate
Forceful and precise. Fine tannins form the backbone, whilst the texture occupies every corner of the palate. The acidity is perfectly integrated, no longer prominent but structure-giving. Brioche notes from autolysis recede in favour of intense mineral, chalky attributes – this is minerality in its purest form. The fruit remains discreet, whilst herbal and Mediterranean nuances subtly emerge. Saline, phenolic, powerfully structured finish of extraordinary length.
Finish
Lingering for minutes, saline-mineral and of remarkable presence. The aromas resonate, the mouthfeel persists – a masterclass in persistence.
Terroir & Origin
The single vineyard site Turo d’en Mota, a parcel of just under 1 hectare at the forest’s edge, was planted in 1940. Extremely chalky soils fundamentally shape the character of this wine. The 2011 vintage yielded merely 2,646 bottles at minimal yields of 21 hl/ha – concentration in its purest form.
Grape Variety & Vinification
100% Xarel·lo, aged on the lees for a minimum of 150 months in cool cellars. A monument to patience and craftsmanship, demonstrating what this underestimated grape variety is capable of.
Food Pairing Recommendations
Oysters, scallops, aged Comté, turbot with truffle, calf’s sweetbreads or baked turbot. The saline minerality demands seafood and refined, reduced preparations.
