Palomino

Also known as: Listán (Canary Islands), Palomino Fino (Jerez)

Almost the entire world production of Palomino disappears into the Solera barrels of Jerez. The grape is neutral, low in salt, almost expressionless – and only becomes the essence of Sherry through biological ageing under Flor yeast. As a still wine, it has no reputation, no following, hardly any prestige.

Artuke in Rioja draws the unexpected conclusion: Palomino without Jotas, without Solera, simply wine. Fresh, dry, salty – a footnote from the perspective of Jerez, but precisely for that reason interesting.
