Character
Recaredo is among the pioneers of biodynamic Cava production and makes a statement with Serral Del Vell for uncompromising quality. This Brut Nature forgoes dosage entirely and presents itself with purist clarity. At 11.5% alcohol, it embodies a deliberately restrained, elegant style that prioritises finesse over power. The extended ageing on the lees – standard practice at Recaredo – lends it depth and complexity, without masking the vibrant freshness.
Terroir & Origin
The name „Serral Del Vell“ refers to a specific vineyard site in Penedès, the heart of the Cava region south-west of Barcelona. Recaredo works exclusively own vineyards in the higher-altitude sites, where chalky soils and the Mediterranean climate with continental influences create ideal conditions. The elevation ensures cooler nights and thus the characteristic freshness that distinguishes Catalan sparkling wines from their French counterparts.
Grape Variety & Vinification
The cuvée from Xarel·lo and Macabeu represents the traditional Catalan varieties. Xarel·lo brings structure, minerality and ageing potential, whilst Macabeu provides floral notes and elegance. Recaredo practises strict biodynamic viticulture and vinifies with natural yeasts. The house philosophy: extended bottle ageing (minimum 30 months, often considerably longer), no dosage, no filtering. The result is a Cava that recalls Grower Champagne – authentic, terroir-driven, artisanal.
Food Pairing Suggestions
Its dry, mineral character makes it the ideal companion for shellfish, particularly oysters, scallops or gambas al ajillo. Excellent with aged Manchego, Jamón Ibérico or sushi. The moderate perlage and low alcohol content also harmonise beautifully with light starters, ceviche or fresh salads with citrus notes.
