Terroir & Origin
The Heiligenstein is the most legendary Riesling vineyard site in the Kamptal – a south and south-west facing terraced vineyard with an extraordinary subsoil of feldspar-rich reddish-brown sandstones, conglomerates, volcanic quartz porphyry and loess. This ancient stone lends the wine its unmistakable mineral signature.
Grape Variety & Vinification
Selective hand harvest in two passes in October 2022. Following skin contact and whole bunch pressing, spontaneous fermentation took place over six weeks in stainless steel. Maturation for ten months on full lees in 600-litre wooden barrels, followed by a further eight months on fine lees in large wooden cask – a patient, respectful approach to great harvest material.
Food Pairing Recommendations
Pan-fried turbot with lemon butter, calf’s sweetbread with morels, scallops with saffron foam, wild salmon with fennel vegetables or mature Comté.
