Tasting note
- Character
- The MCMLV from the 2022 vintage presents itself as the undisputed masterpiece of the estate. Characterised by an enormous density and a tight, almost awe-inspiring structure, this Sauvignon Blanc displays an aristocratic calm and concentration. The ripe fruit, which winemaker Antoine Gouffier deliberately seeks in the vineyard, combines here with a puristic, uncompromising tension. It is an intellectual, long-lived wine that elevates the typicity of the appellation far beyond the usual standard.
- Terroir & Origin
- The grapes come from the historic parcels of Les Coûtes and Les Sapins in Saint-Andelain, in the heart of Pouilly-Fumé in the Loire. The soil here is characterised by the so-called Terres Blanches – a light, weathered Saint-Doulchard marl, rich in fossilised Exogyra virgula oysters and fine veins of iron (glauconite). The vines, planted in the historic year of 1955, have been digging their roots into this lime-rich layer for over six decades, translating this unique geology into pure substance.
- Grape Variety & Vinification
- This single-varietal Sauvignon Blanc is based on the precious heritage of the domaine’s oldest vines. Antoine Gouffier works according to strict Demeter guidelines, consistently continuing the biodynamic path of the domaine’s pioneers. In the cellar, radical minimalism reigns: fermentation occurs spontaneously with wild yeasts, without fining agents or enzymes. The gentle vinification and minimal addition of sulphur before bottling preserve the wild energy and natural power of this monumental growth.
- Food Pairings
- A wine of such structure demands sophisticated cuisine. It is an excellent partner for pan-fried turbot with a delicate beurre blanc, stuffed breast of veal, or braised white meat. It also shows its class alongside mature, firm hard cheeses such as a long-aged Comté.
