Wine description for Pantarei Olio Extra Vergine di Oliva 1500ml Magnum by Occhipinti

Arianna Occhipinti is known for her unadorned Frappato wines from Vittoria – yet once the last grape has been picked, a second harvest begins on her estate: that of the olives. In the district of Piraino in Chiaramonte Gulfi she discovered centuries-old Tonda Iblea trees, from which the Pantarei has been produced ever since. An oil of the same straightforward honesty as her wines – cold-extracted, hand-harvested, without any cosmetic touches. The 1.5-litre magnum bottle matches Sicily’s generosity: this is an oil for kitchens where cooking happens every day, not for the shelf.

Colour & appearance
Bright lime green with golden reflections and a slight, natural cloudiness – the vivid picture of a freshly extracted oil.
Nose
Intensely fruit-driven yet gentle at the same time: green olives, freshly mown summer meadow, alongside sweet yellow tomatoes and cooked artichokes. A fine peppery spice and notes of green almonds complete the picture.
Palate
Creamy on the attack, once again carried by pronounced fruit. Young almonds and pine nuts define the impression, underpinned by a moderate pungency that brings freshness and tension into play.
Finish
Long and pleasingly warm, with an enticing bitter note that cleanly balances the youthful fruitiness.
Terroir & origin
The olives come from the district of Piraino in Chiaramonte Gulfi in the province of Ragusa – from trees several hundred years old, trained in the traditional umbrella-net system.
Grape variety & vinification
Monovarietal from 100% Tonda Iblea, the autochthonous variety of the Monti Iblei. Hand-harvested in the second half of October, extracted in a continuous cold cycle, stored in stainless steel tanks.
Food recommendations
Raw applications show it at its best: drizzled over bruschetta with tomato, grilled vegetables, artichokes or bean salad. But also a robust kitchen oil for pasta al pomodoro and Mediterranean fish dishes.
Special features
The rare single-varietal purity of the Tonda Iblea, the great age of the trees and the gentle cold extraction yield an oil of unusual aromatic clarity – fruity rather than heavy, with the fine bitter-peppery balance that distinguishes great Sicilian oils.
