- 100% Carignan, vinified uncrushed, without added sulphites. Tom Lubbe relies on permanent ground cover and green manuring in the vineyard to naturally lower pH values and alcohol potential. Fermentation is spontaneous, maturation minimally interventionist – the wine essentially creates itself.
