- Colour & Appearance
- Luminous straw yellow with greenish reflections. Fine, persistent perlage with elegant mousse chains that bear witness to extended ageing on the lees.
- Nose
- Expressive and complex: white flowers and citrus fruits meet green apple and brioche. The Chardonnay component brings creamy notes of hazelnut and freshly baked bread, whilst the Xarel·lo contributes Mediterranean freshness with herbs and fennel. Mineral hints of wet chalk underscore the provenance from coastal vineyard sites.
- Palate
- Precise and taut with vibrant acidity that harmonises perfectly with the creamy texture. The zero dosage allows the wine its pure expressiveness: lemon zest, white peaches and a saline minerality dominate. The mousse is fine-bubbled and silky, the structure impressively taut without being harsh. Remarkable length for a young Cava.
- Finish
- Long and refreshing with lingering citrus notes and a saline, almost iodine-like minerality. The yeast autolysis aromas fade discreetly without becoming obtrusive.
- Terroir & Origin
- The vineyards of Alta Alella lie in the DO Alella, just a few kilometres north of Barcelona on the Mediterranean coast. Proximity to the sea shapes the microclimate and imparts the wines‘ characteristic saline minerality and freshness.
- Grape Variety & Vinification
- Cuvée of Chardonnay and Xarel·lo made by the traditional method. Hand-harvested grapes in small crates, manual riddling of bottles – an effort only top producers can afford. Bottled as Brut Nature without dosage, the minimal residual sweetness comes exclusively from the harvest. Organic viticulture since the estate’s founding in 1991.

- Oysters, scallops, ceviche, sushi and sashimi. Excellent with grilled fish, seafood or as an elegant aperitif. The saline minerality makes it the ideal companion to Mediterranean cuisine.
