Colour & Appearance
Deep garnet red with slightly translucent brilliance – classically Burgundian in its elegance and transparency.
Nose
Fresh and precise with fine lees notes and subtle sweetness. Barberry and cranberry dominate, accompanied by sour cherry and sweet cherry. Ethereal nuances lend additional complexity to the bouquet. The wine appears remarkably unaffected by the challenging vintage – instead showing pure finesse and elegance.
Palate
Juicy and vibrant with pronounced yet perfectly integrated acidity. The fine extract sweetness balances the lively fruit, whilst the elegant texture is typically Volnay. The wine possesses that rare combination of suppleness and structure that makes Thomas Bouley one of the rising talents of the appellation.
Finish
Tart and still somewhat closed – this wine needs time. The tannins are present but fine-grained and promise good ageing potential.
Terroir & Origin
Five parcels totalling two hectares in Volnay, situated on both lower and upper slopes. The deep, clay-rich soils on limestone bedrock give the wine its characteristic minerality and structure. Average vine age: 34 years.
Grape Variety & Vinification
100% Pinot Noir, fully destemmed. Fermentation in open-top fermenters, maturation for 18 months in barriques with 25% new oak. Thomas Bouley’s impressive feel for oak and tannin is evident in the perfect balance between fruit and structure.
Food Pairing Suggestions
Venison with beetroot, olive, cherry and liquorice, partridge fricassée with porcini mushrooms or risotto with roasted root vegetables and genmai miso. The wine harmonises beautifully with game and earthy flavours.
