Wine Description for Volnay „Clos de la Cave“ AOC 2021 by Jean-Marc & Thomas Bouley
- Colour & Appearance
- Luminous, medium ruby red with brilliant clarity. The wine displays the typical transparency of a classic Volnay, with delicate garnet reflections at the rim – a Pinot Noir of elegant appearance.
- Nose
- Seductive and precise in equal measure. Ripe cherries and strawberries meet floral notes of violets and rose petals. Beneath this, fine spice: clove, a hint of undergrowth and subtle roasted notes, bearing witness to sensitive oak handling. The fruit remains pure-toned and unobtrusive – typical of Thomas Bouley’s restrained style.
- Palate
- Here the full class of this village wine reveals itself. Silky texture with present yet perfectly integrated tannin structure. Red fruit dominates – cherry, raspberry, a touch of pomegranate. Despite the power of 13% ABV, the wine never feels heavy, remaining instead graceful and precise. The acidity is vibrant yet never intrusive, lending the wine that roundness for which Bouley is renowned.
- Finish
- Medium to long, with persistent fruit and fine mineral tension. The tannins remain refined through to the end, a subtle spice note lingering. A wine that invites the next sip.
- Terroir & Origin
- The „Clos de la Cave“ comes from the domaine’s own parcels around Volnay, one of the finest villages of the Côte de Beaune. The limestone-rich soils impart to the Pinot Noir that feminine elegance and finesse for which Volnay is world-renowned.
- Grape Variety & Vinification
- 100% Pinot Noir from meticulously tended vineyards. Thomas Bouley combines traditional vinification with an impressive feel for oak and tannin. Ageing takes place in French oak barrels, with oak usage remaining subtle and never allowing the wood to dominate the fruit.
- Food Pairing Suggestions
- A versatile companion: roasted duck breast, Coq au Vin, veal medallions with mushroom cream or aged Comté. Also an exciting pairing with tuna tataki.
- Special Features
- Since 2010, Thomas Bouley has led the Domaine to the top of Volnay. This village wine impressively demonstrates that wines of remarkable precision and depth can be produced even below Premier Cru level.
