Character
The name says it all: With just 2% alcohol, Enric Soler improvises here on unconventional terrain. This is not wine in the classical sense, but a vinified rarity – an experimental field between Pétillant Naturel, must and fermented grape juice. The Catalan Xarello grape, otherwise the backbone of many Cavas, reveals itself here in a radically reduced, near alcohol-free interpretation that recalls living grape must with delicate fermentation.
Terroir & Origin
Penedès, situated between Barcelona and Tarragona, is historically Cava country, yet a new generation of winemakers like Soler breaks with convention. The region benefits from Mediterranean climate with cooling influences from the sea and nearby higher elevations. Chalky soils and the temperate microclimate create ideal conditions for the autochthonous Xarello – a variety that brings freshness and minerality, even in this unusual vinification.
Grape Variety & Vinification
Xarello is Catalonia’s underrated heroine: high acidity, restrained aromatics, mineral-driven. To produce a wine with just 2% alcohol, fermentation must be stopped or controlled extremely early – an oenological tightrope walk. Soler likely works here with chilled fermentation or minimal yeast contact, possibly with natural carbonation. The result is a lively, barely sweetened beverage that places the primary fruit of the grape centre stage – refreshing, light, almost ephemeral.
Food Pairing Suggestions
With this alcohol level, one thinks less of classical wine pairing and more of light aperitif moments. Perfect with fresh oysters, ceviche or gazpacho.
