- Terroir & Origin
- The grapes come primarily from Saint-Romain, sourced from vines of at least 30 years old at around 425 metres elevation – predominantly from the vineyard site above Les Sous Roches, supplemented by a small proportion of declassified Village-level parcels. This altitude brings the characteristic freshness and tension to the wine.
- Grape Variety & Vinification
- 100% Pinot Noir, hand-harvested and partially destemmed. Spontaneous fermentation in stainless steel with pigeage and remontage, followed by spontaneous malolactic fermentation. Ten to twelve months ageing in a mix of barriques (228, 350, 500 litre) and tonneaux with a maximum of 10% new wood. Bentonite fining, coarse filtration, minimal sulphiting (40-50 mg/l) at bottling. The Biodyvin-certified estate works consistently with natural methods.
